John started with nothing but a wood-fired oven, a handful of recipes, and the belief that Richmond deserved truly great bread. Three decades later, that belief hasn't wavered. We still stone-mill our own flour, proof our sourdough overnight, and shape every loaf by hand — exactly as we always have.
What has changed is the community that grew around us. Generations of Richmond families have made John's part of their Saturday morning ritual. That trust is something we take seriously every single day we open our doors at 7am.
We mill our own flour from whole grain wheat sourced from Victoria's Wimmera region. The flavour and nutrition in stone-milled flour simply cannot be replicated.
Our sourdough proofs for a minimum of 18 hours. This slow fermentation develops complexity, improves digestibility, and creates the open crumb our loaves are known for.
No machine shaping. Every loaf, every croissant, every baguette is touched by hand. You can taste the difference — and you can see it in the crust.
The sourdough from John's has been part of our Sunday morning for fifteen years. There is simply nothing else like it in Melbourne.
